milk4 tbps sugar
1 egg this egg is 67g, take a large egg.
some eggs are 40-50g if that's the case then increase the amount of milk slightly.
3/4 tsp salt
3 cups plain flour
1 1/4 tsp instant yeast.
30g butter
lightly warm the milk and add the yeast and sugar the leave it for about 5 minutes
this is instant yeast so when the bubbles start to form that means the yeast is active,
once you are sure it's active you don't have to keep any longer.
if you are in a cold climate leave it till the yeast is active and foamy.
soft butter
salt
add the flour and keep stirring.
make sure to buy a good quality flour
now start kneading by hand.
if it's sticky add a little bit of flour.
if you are using a stand mixture,
mix everything well on low speed for 2 minutes
then mix in high speed till the dough is stretchy.
I knead this for 7-8 minutes by hand.
it has to be soft like this.
oil the bowl
now cover it and let it double in size,
don't over proof this
if you do it will be hard to cut the circles.
roll the dough as shown
don't press this too hard.
I made this so it's about 1 cm thick
you can even use a doughnut cutter for this or just any cup.
the diameter has to be around 3.5 inches
I'm using a icing nozzle to cut the center holes.
you can re use this dough to form more donuts
keep this donuts on a parchment paper
I cut this parchment paper circle to match the size of my fry pan.
cover this for 10 mins using a cling film
10 minutes is good enough for a hot climate
now make a ball out of all the remaining dough and let it proof for 30 minutes
then use the same method to cut out circles from this.
make sure the oil it hot.
once the oil is hot keep the flame on medium.
else the donut will burn.
now add the donuts to the oil with the parchment paper.
once the parchment paper sinks a little, take it out using a tong
using this method the doughnuts will keep it's shape better.
wait till one side gets brown in color
it took me around 45 seconds to fry one side.
once both sides are fried equally take it out of the oil.
these will cook even more after taken out of the oil.
Now I'm going to make a chocolate glaze.
icing sugar
sweeten cocoa powder
1 tbsp milk
you can even use this galze as it is.
then you'll have to add a little more icing sugar and make it thicker
but I'm adding some chocolate chips
then I'm going to double boil it.
after about 10 seconds remove from the heat and melt the chocolate.
now you can use this glaze on the donuts
drip off the excess
see how beautiful these look
now I'm making just a white icing
1/2 cup icing and 1 tsp milk
vanilla
red food color
now this becomes pink
keep everything on a cooling rack so the excess can drip off.
